I wanted to share the recipe for clean Caesar salad (which I love!) from the Fixate cookbook.
1 Serving
4 cups chopped romaine
3/4 cup shredded chicken
2 Tbsp. grated parmesan
1 tsp. drained capers
1 slice whole grain sprouted bread (I used Ezekial), cut into cubes, toasted
2 Tbsp. Caesar dressing (see below)

1. Combine all ingredients, top with dressing. Toss well and serve immediately.
Dressing (makes 10 servings):
1/2 cup reduced fat or nonfat Greek yogurt, plain
3 Tbsp fresh lemon juice
1/3 cup shredded parmesan
2 cloves garlic, coarsely chopped
2 anchovies
1/3 cup extra virgin olive oil
1/2 tsp. ground pepper
1 dash seat salt
1/2 cup reduced fat or nonfat Greek yogurt, plain
3 Tbsp fresh lemon juice
1/3 cup shredded parmesan
2 cloves garlic, coarsely chopped
2 anchovies
1/3 cup extra virgin olive oil
1/2 tsp. ground pepper
1 dash seat salt
1. Place ingredients in a blender or food processor, cover, and blend until smooth.
